Is there a more decadent smell than warm, caramelized cashews wafting through the air? The sweet and salty combo brings back memories of the summer I lived in London, where hot nut vendors tempted my poor college budget during frequent walks across Westminster Bridge.
The most indulgent candied nuts are coated in sugar and butter. This is a lightened up version that still has plenty of flavor and nostalgia — a winner for special occasions and everyday consumption!

How to make maple cinnamon roasted nuts
1. Preheat oven to 300 degrees F.
If your nuts are raw, you may wish to spread them on the baking sheet and roast in the preheating oven until they are slightly browned. If the nuts are already roasted or you’re short on time, move right to the next step.
2. Combine spices and wet ingredients.
Add maple syrup, cinnamon, vanilla, and salt (optional if nuts are already salted) to a medium sized mixing bowl. Use a spatula to evenly distribute the flavors.
3. Mix in nuts.
Add the nuts and use the spatula to ensure they are evenly coated. If it seems like there’s excess coating, feel free to toss in more nuts. Taste test a couple and add salt if necessary.
4. Bake for 15-ish minutes.
Spread the nut mixture onto a lined baking sheet and put it in the oven. Mine are typically done in 15 to 20 minutes. Set a timer and keep an eye to ensure they don’t burn.
5. Cool and enjoy.
The roasted nuts may be slightly soft and wet when they come out of the oven. Allow them to cool and dry before digging in or storing for later. If you don’t plan to use all within a week or two, pop them in the freezer for a prolonged shelf life.
